Profile: . The wine, aged for 8 months in traditional oak barrels (2500 lt), is bottled after filtering at the Ai Valloni Estate. The grapes, grown according to organic farming methods, are harvested by removing the bunches and berries that have not yet completed the ripening process to perfection. After crushing and fermentation, which lasts 7-9 days, the wine is decanted into steel vats and subjected to racking to remove the lees. The wine then matures for another 12 months in 25-hectolitre oak barrels and is then bottled. Vineyard age: 35 years - Vineyard area 3.5 hectares, Yield 50 quintals. Vineyard at 480 meters above sea level.

More about the producer: The Podere ai Valloni winery is a historic reality in Alto Piemonte, the first registered producer of Boca DOC since 1980. The vineyard, managed under a certified organic farming regime, is rooted in the rocks of the Supervulcano della Valsesia, porphyries with a characteristic purple-red color that give the winery's wines their distinctive characteristics of elegance and minerality. Wines made exclusively from their own grapes with a deliberately very low yield per hectare, preferring quality over quantity.
