Organoleptic characteristics
Ruby-red in colour with slight garnet highlights, the nose is intense with an exceptionally complex olfactory heritage that, depending on its state of evolution, tends to encourage fruity and floral notes, such as raspberry, violet and orange blossom, or spicy and balsamic notes like sweet cocoa, cedar and vanilla. On the palate, the “hard” components (acidity, tannins and salts) are pleasantly balanced out by the “soft” ones (alcohols and polyalcohols), with exceptional intensity and persistence that make the Nebbiolo a powerful, elegant wine with a great personality.
Pairing
It is perfect match for braised meats, roast red meat, game, wild game, truffle foods and hard and aged cheeses.
