Profile: Guyot planting, manual harvest after green harvesting, again selection on arrival at the cantina of the best grapes.
Winemaking/Vinification :
maceration with the skins for about 7-8 days in stainless steel tanks at controlled temperature.
Maturation :
in stainless steel tanks for about 4 months and then in French oak barriques for 36 months.
Nose : the bouquet has a hint of wild rose and liquorice.
Aroma: Alcoholic strength well balanced with hints of fruit and spices.
Pairings : Excellent with roasts, stewed meats, game and cheeses with a full flavour
