Viticulture: The grapes are harvested in the last ten days of September and gently crushed. After a 15-day fermentation, maceration begins for another 10 days. The wine matures for about 10 months in 500-liter oak barrels, 6 months in steel vats and rests in bottles for at least 12 months.
Wine: This wine is the selection of some vineyards particularly suited to this vine. The aging in wood does not want to distort and affect the typical characteristics of the Barbera vine that, as in the Cascina Gavetta wines, should be clear and recognizable. The vinification, as with the Barolo wine, brings out its full potential. The more stiff and rustic characters are softened by appropriate refinement. In the nose, perfume of cherries and spices. In the mouth, wine of long persistence, right acidity, full, rich and elegant.
