Profile: Barbera d'Asti Ercole: the most recently produced wine is dedicated to the padre della famiglia from whom the label takes its name.
The harvested grapes, after being pressed and the stem removed, undergo their maceration process in the tank overnight; fermentation begins the next morning and during the first 2/3 days the cap is beaten down to give the wine more structure. After malolactic fermentation, in order to further improve its qualities, it undergoes a battonage of approximately 3/4 months, after which it is stabilised, filtered and bottled.
Taste/smell: a robust structure that resists aging well and a bouquet of ripe fruit.
Pairing: Barbera d'Asti "Ercole" goes well with red meat and important main dishes, but also with game.
