Eros is the god of love. According to tradition, Eros was the son of Ares and Aphrodite. He is depicted as a child, often with wings, who takes pleasure in wreaking havoc in the hearts of lovers, sometimes inflaming and sometimes injuring them. This rosé wine made from Nebbiolo grapes is dedicated to Eros. During fermentation, the must has only brief contact with the skins, releasing the best fruit aromas that contribute to the production of this seductive wine that is excellent as an aperitif.
Vineyard: in the town of Sizzano, Vernazzole region, vineyard Cirilu, 0-20 Ha. South-south/west facing. Acidic clayey sandy soil.
Grapes: 100% Nebbiolo, known locally as Spanna.
Grape yield per hectare: 6,000 kg Winemaking: manual harvest in crates in early October: brief contact with the skins for the first 18/24 hours, then pulverization and fermentation at a controlled temperature (20°C).
Aging and bottling: aging in stainless steel vats for 5 months. Bottling at the end of March. Aging in glass for two/three months.
Organoleptic characteristics: brilliant intense rosè; intense fresh aroma with hints of forest fruits, especially raspberries and strawberries, with considerable persistence of earthy notes reminiscent of wild flowers. An intense flavor of ripe fruit, sharp but balanced and harmonious with a hint of tannin, allowing this wine to linger.
Food and Wine Pairing: this wine can be drunk throughout a meal and is the perfect accompaniment to white meats and fish. The sharp flavor and mild tannin content of this wine enhances baked dishes, especially fried vegetables. An excellent match for any pasta dish with a simple tomato sauce. Serving temperature: 12°C. Optimal aging: this wine is ready for consumption during the first and second years of life.
