In Greek mythology, Athena was the Goddess of knowledge, wisdom and the more noble aspects of war. The knowledge represented by Athena includes the technical skills used in agriculture, and more generally in all the various craft skills. The white wine made from Erbaluce grapes has an intensely bright straw yellow color. It has a strong lingering aroma with notes of wild flowers, aromatic herbs and hay. On the palate, it is incisive with sharp but well-balanced acidity and a lingering finish of exotic fruit.

Location: south/west facing. Acidic clayey sandy soil.
Grapes: 100% Erbaluce.
Yield of grapes per hectare: 7,000 kg.
Winemaking: manual harvest in crates during the first 10 days of September. Fermentation outside the skins, stripping, pressing and fermentation with selected yeasts in stainless steel vats at a controlled temperature.
Aging and bottling: aged in stainless steel vats for the first five months.
Bottling: at the end of March.
Maturation: in glass for 2 months.
Aroma: Intense, persistent perfume with hints of wild flowers, aromatic herbs and hay.
Taste: On the palate, the wine has a full body with well-balanced sharpness and a lingering finish of exotic fruit.
Wine-Spite Combinations: This wine is the perfect aperitif or can be paired with first or second courses based on fish. Excellent with freshwater fish from rivers and lakes, such as trout, pike and perch.
Serving temperature: 10°C.
Optimal aging: this wine is ideally ready for consumption in the first 12-18 months, but can also be kept in the cellar for a few years.
