Grape variety: 100% Erbaluce
Grape yield per hectare: 70 Q.li (wine yield: 15 liters per 100 Kg of dried grapes).
Vinification: the finest and healthiest bunches are harvested by hand in shallow crates in the first decade of September. Drying until January-February of the following year, followed by destemming and pressing. The must is clarified and fermented with selected yeasts in steel vats in the cold for slow and long fermentation.
Aging and bottling: aged only in steel, bottled in September and aged for 3 months in bottle.
Organoleptic characteristics: deep straw yellow color with amber tones due to aging. Complex bouquet and persistent with notes of candied fruit, sultanas and herbal aromatics. Full and enveloping on the palate, justifiably sweet but balanced with acidity and minerality. Finish persistent of dried fruits such as hazelnut.
Pairing: Christmas cakes, fruit pies, pastries, dry pastries, dark chocolate.
Serving temperature: 13 degrees Celsius.
Optimal aging: ideally in the first two years, but can stay longer in the cellar.
Alcohol content: 14.5%.
